Raw revolution
Classically trained chef Roxanne Klein elevates raw food to
gourmet cuisine.

having Studied at the CaliFOrnia Culinary aCademy and cooked at acclaimed restaurants in both the U.S. and France, it’s no surprise that when she was urged to adopt a raw diet, Roxanne Klein was skeptical. “I said, ‘Are you kidding, eat raw? I’m a chef!’”

It was actor Woody Harrelson who encouraged Roxanne to give raw a try. “We were traveling together with some other people in Thailand,” she says.

“Woody was eating 100 percent raw, and he was very energetic, an amazing guy. He said ‘ Try it for a month, then give me call.’” Roxanne gave it a shot and was suitably impressed by the results. “I found myself waking up completely rested after five hours of sleep, instead of eight or nine. And I didn’t need my morning cup of coffee,” Roxanne recalls. “The more I read, the more I realized my reaction was typical of people who switched to a raw diet.”
